Peanut Butter Stir Fry Noodles

Your New Go-To Weekday Dinner


Ingredients

  • 1-2 large carrots peeled and thinly sliced

  • 1 bunch of scallions thinly sliced (separate whites and greens)

  • 6oz snow peas

  • 6 garlic cloves roughly chopped

  • 12 oz NY strip or sirloin (chicken or pork would work as well!)

  • 1 Tsp Salt

  • 1/2 C peanut butter

  • 1/4 C soy sauce

  • 3 Tbsp rice vinegar

  • 1-2 Tbsp sriracha (depending on spice level)

  • 1 Tsp sesame oil

  • 1 Tsp fish sauce

  • 14 oz udon noodles (could also use spaghetti or linguine) - cooked according to the package (you can do this ahead of time if you want)

  • Crushed peanuts for garnish

Preparation

I love this dish because it has a little of everything. Sweetness from the peanut butter, salt from the soy sauce and fish sauce, chewy noodles and crisp veggies.

  1. In a large bowl or measuring cup, add the peanut butter through fish sauce and whisk to combine. Set to the side.

  2. Heat up a large skillet or wok and then add some high smoke point oil (canola, grape seed, avocado, etc.) - just enough to cover the bottom. The goal here is to cook quickly at high heat.

  3. Add the steak and salt and cook for 1-2 minutes. Give it a flip or stir every 30 seconds or so. If it is sliced thinly, it will cook fast!

  4. Remove the meat, add a little extra oil if needed and add the carrots, scallion whites and snow peas. Stir fry for a few minutes to soften the carrots and then add the garlic. Stir fry for another 30 seconds to a minute.

  5. Turn off the heat and add the noodles, meat and peanut sauce and mix well. The residual heat should warm up the noodles and sauce so no need to keep the pan on the burner.

  6. Plate up and garnish with the scallion greens and some crushed peanuts. Enjoy!
