Bruschetta

A Fresh Bite


Ingredients

  • 1.5 C Diced Tomatoes - Cherry, Roma, etc. Use what is fresh!

  • 5 Tbsp Good Quality Olive Oil

  • 1 Tbsp Balsamic Vinegar

  • 2 Tbsp Finely Diced Shallot (~1 medium/small shallot)

  • 5-6 Large Basil Leaves Roughly Chopped

  • 3 Cloves Garlic - Minced

  • Pinch of Red Pepper Flakes

  • Salt to Taste

  • Crusty Loaf of Bread - like a baguette

  • Parmesan Cheese To Top

Preparation

This is a simple dish that highlights wonderful summer ingredients and is a perfect accompaniment to the warm weather. Try and use fresh tomatoes and good extra virgin olive oil for the best results.

  1. In a sealable container, combine the tomatoes through salt (only use 3 Tbsp of olive oil) and set in the refrigerator for at least 1 hour.

  2. Slice your bread into about 1/2 inch thick pieces. And brush them front and back with the remainder of the olive oil. Toast in a pan or oven or grill (my favorite) until lightly golden in color and crispy in texture.

  3. Top with some grated parm or extra basil and enjoy!
