Chicken Parm Sandwich
Crispy, Saucy, Garlicky
Ingredients
3 Tbsp Olive Oil
1 Head of Garlic - Minced
28oz Can of Crushed Tomatoes
1/2 Tsp Red Pepper Flakes
1/3 C Heavy Cream
1 Tbsp Fresh Basil
Salt To Taste
4 Tbsp Butter - Softened
1/2 Tsp Dried Parsley
Sub Rolls - Whatever you Like
2 Chicken Breasts (makes 4 cutlets)
1 Cup All Purpose Flour
2 Eggs
1 Tbsp Milk
2 Cups Panko Bread Crumbs Plus Seasonings (I like garlic powder and Italian herbs but season however you like)
Fresh Mozzarella (As much as you want)
Grated Parm To Top
Preparation
This is a top 5 sub that I’ve ever made. Making garlic bread out of the sub before adding the chicken is game changing.
Heat the olive oil over medium heat and add all but 2 cloves worth of the garlic and the red pepper flakes. Saute until fragrant and then add the tomatoes and basil. Simmer for 30 minutes on low before adding the heavy cream. Salt to taste.
In a medium sized bowl, combine the butter, reserved 2 cloves of minced garlic and dried parsley. Slice your rolls in half and spread the butter mixture on the inside layer and place under the broiler for a couple of minutes or until it just starts to toast. Be careful not to toast it too much here because we will toast it again later.
To prepare the cutlets, slice the chicken breasts in half to yield two thin slices and use a mallet to thin out any thicker areas. Regardless of how thin or thick, just try to make it consistent.
In three separate bowls add the flour, egg and milk (whisked together), and seasoned bread crumbs.
Start by coating the chicken in flour, making sure to shake off the excess. Then dip the chicken in the egg mixture and then into the bread crumbs. Press down on the chicken to really make sure the bread crumbs coat it evenly and thoroughly.
In a large saute pan or cast iron pan, heat about 1/2 inch of vegetable oil over medium high heat until 350 degrees F. Fry the chicken for about 3 minutes per side. If the chicken is thin, it will cook fast, so just make sure the bread crumbs get nice and golden brown.
Remove from the oil and immediately season with salt.
Prepare the sub by adding a layer of sauce to each side of the bread. Then place down 1-2 cutlets depending on the size of the bread and top with the mozzarella and parm. Broil the sandwich (without the top) for a minute or two to melt the cheese. Enjoy!
