White Bean, Zucchini, and Sausage Pasta

Ingredients

Ingredients

  • 12 oz dried pasta, preferably bite-sized

  • 2 tbsp extra virgin olive oil

  • 1 lb of chicken italian sausage, removed from casing

  • Half yellow onion diced

  • 4 garlic cloves, minced

  • 1 large zucchini cut into bite-size chunks

  • 14.5 oz can of great northern white beans, drained

  • 28 oz can of whole tomatoes, crushed

  • 3 C Chicken stock

  • Salt to taste

  • Serve with parmesan cheese

Preparation

This will most likely become part of your normal dinner rotation. Easy and delicious.

  1. Boil the pasta 2 minutes less than package instructions for al dente. Strain and set to the side.

  2. In a large pot, brown the sausage in the olive oil, breaking it up into bite sized chunks as it cooks.

  3. Add the onion and garlic and saute for 2-3 minutes or until the onions are translucent. 

  4. Add the zucchini and saute for another 2-3 minutes.

  5. Add the beans, tomatoes and chicken stock. Bring to a simmer for 5-10 minutes.

  6. Add the pasta and season with salt to taste

  7. Serve with a drizzle of extra virgin olive oil and some parmesan cheese
