White Bean, Zucchini, and Sausage Pasta
The perfect hearty, weeknight meal.

12 oz dried pasta, preferably bite-sized
2 tbsp extra virgin olive oil
1 lb of chicken italian sausage, removed from casing
Half yellow onion diced
4 garlic cloves, minced
1 large zucchini cut into bite-size chunks
14.5 oz can of great northern white beans, drained
28 oz can of whole tomatoes, crushed
3 C Chicken stock
Salt to taste
Serve with parmesan cheese
Preparation
This will most likely become part of your normal dinner rotation. Easy and delicious.
Boil the pasta 2 minutes less than package instructions for al dente. Strain and set to the side.
In a large pot, brown the sausage in the olive oil, breaking it up into bite sized chunks as it cooks.
Add the onion and garlic and saute for 2-3 minutes or until the onions are translucent.
Add the zucchini and saute for another 2-3 minutes.
Add the beans, tomatoes and chicken stock. Bring to a simmer for 5-10 minutes.
Add the pasta and season with salt to taste
Serve with a drizzle of extra virgin olive oil and some parmesan cheese
