Fresh Salsa

So Much Better Than Jarred


Ingredients

  • 3-4 tbsp olive oil

  • 6-7 roma tomatoes - halved

  • 1/2 large onion (white, red, or yellow would work)

  • 2 jalapeños - 1 with seeds and 1 without (can omit for milder salsa)

  • 1 bell pepper - cut into large pieces

  • 5 garlic cloves

  • 1 bunch of cilantro

  • Juice of 2 limes

  • Salt to taste

Preparation

This homemade salsa is easy to make and is so much better than jarred salsa from the store. You control your blender so make it as chunky or smooth as you like!

  1. Preheat your oven to 425 degrees F

  2. Coat a baking sheet with olive oil and place your veggies (tomatoes through garlic cloves) cut side down on the sheet. Sprinkle with a pinch of salt and place into the oven for about 20 minutes or until the pepper and tomato skins start to char and lift off.

  3. Remove the veggies from the oven and allow them to cool down for a few minutes. While still hot (but not so hot you burn yourself) remove the skins from the tomatoes (optional).

  4. Once the veggies have cooled, place them and any juices from the sheet pan into a blender along with a bunch of cilantro (stems and all) and the lime juice. Pulse until your desired smoothness.

  5. Salt to taste and refrigerate for at least an hour. Enjoy!
