Boil ‘Em, Mash ‘Em, Stick ‘Em In A Stew

Ingredients

  • 4 lbs yukon gold potatoes

  • 2 C half and half

  • 3 sprigs of thyme

  • 2 sticks of butter, softened

  • ¼ C creme fraiche 

  • Salt and pepper to taste

Preparation

Mashed potatoes go great with almost every meal. Just try to forget about how many calories you’re consuming and enjoy!

  1. Peel potatoes and cut into 1.5-2 inch chunks

  2. Add to a pot of water and bring to a boil until the potatoes are tender and a fork can be pressed through them with little resistance.

  3. While the potatoes are boiling, add the half and half, and thyme to a sauce pan and heat over medium low heat until warm and fragrant (about 5 minutes), and then remove the thyme sprigs.

  4. When the potatoes are ready, strain them and let them sit in the strainer for a couple of minutes to dry. 

  5. Add the potatoes to a large bowl with the butter and mash with a potato masher or whisk.

  6. Add the half and half about ½ C at a time, stirring in between until you achieve the desired consistency.

  7. Add the creme fraiche and season to taste.
