Cherry Tomato Feta Pasta

Ingredients

1 Large Shallot - Diced

4 Garlic Cloves - Crushed

2 Pints Cherry Tomatoes

1/2 C Olive Oil

2 Tbsp Balsamic Vinegar

1 Tbsp Crushed Red Pepper Flakes

8oz Feta Cheese

3 Tbsp Fresh Basil - Roughly Chopped

12oz Dried Pasta (Whatever you like, I chose orecchiette)

Preparation

This is an amazingly simple and fast recipe that would be paired nicely with a salad or some grilled chicken. And between your salted pasta water and the feta cheese, this dish will be plenty salty without extra seasoning. Oh, and don’t forget the balsamic vinegar…it really elevates the dish!

  1. Preheat oven to 400 degrees F.

  2. Place tomatoes, garlic, shallots, oil, vinegar, and red pepper flakes in an oven safe dish and mix to combine.

  3. Place the block of feta in the dish on top of the other ingredients.

  4. Bake for 30 minutes, or until the cheese softens, the tomatoes burst and the shallots become translucent.

  5. While the cheese bakes, boil your pasta (make sure to salt your water!) until al dente. Reserve about 1/2 cup of pasta water.

  6. Remove cheese and tomatoes from oven and add pasta, pasta water, and basil.

  7. Mix well to combine and enjoy!
