Breakfast Hash
Breakfast All Day
Ingredients
2 C Diced Potato (really any kind you want works)
1/2 Large Yellow Onion - Diced
1 Large Bell Pepper - Diced
3 Garlic Cloves - Finely Chopped
1 lb Ground Turkey (could use pork, chicken or beef)
3 Tbsp of your favorite seasoning blend (here’s mine)
1 Tbsp Cumin
1 Tsp Chilli Powder
1 Tsp Ground Coriander
1/2 Tsp Cayenne
1 Tsp Paprika
1 Tsp Dried Oregano
4-6 Eggs (depends on how many fit in your dish)
2 Radishes - Thinly Sliced
Fresh cilantro for garnish

Preparation
This recipe is less of a recipe and more of a suggestion. When I have leftover veggies, meat, etc. that I need to use…breakfast hash. Use whatever potatoes, veggies and seasonings you have, and bring it all together with a few eggs for a cheap, easy and satisfying meal!
Preheat your oven to 400 degrees F. Toss your potatoes in some oil and season with salt and pepper to taste. Roast for 20-30 minutes or until cooked through and golden brown. After they are done, leave the oven on!
Heat up 3 tbsp of oil in a large dutch oven and brown your ground turkey. Then add the onion, bell pepper and garlic and continue to cook until the onion and bell pepper have softened.
Add your seasoning (including salt to taste!) and cooked potatoes and stir to combine.
Using a large spoon, make 4-6 shallow wells and crack an egg into each one.
Place the dish into the oven and cook just until the white starts to set for a runny egg (~ 3-5 minutes).
Top with some thinly sliced radish, cilantro and hot sauce. Enjoy!
