Momma Burns’ Banana Bread
A Comforting Classic
Ingredients
3/4 C Brown Sugar
1/3 C Apple Butter or Apple Sauce
2 Eggs
1/12 C Mashed Ripe Bananas (~3-4)
1/3 C Water
2 Tsp Vanilla Extract
1 Tbsp Ground Cinnamon
1 2/3 C All Purpose Flour
1 Tsp Baking Soda
1/2 Tsp Salt
1/4 Tsp Baking Powder
~2 Tbsp Turbinado Sugar
Preparation
Perfect for when your bananas are getting a little too ripe. If you aren’t ready to make banana bread when your bananas are ripe, throw them in the freezer (peel and all) and then thaw them when you’re ready!
Preheat oven to 350 degrees F. Grease and line a loaf pan with parchment paper.
Thoroughly whisk sugar, apple butter, eggs and water in a medium large bowl. Then add the mashed bananas, vanilla extract, and cinnamon and whisk to incorporate.
In a separate bowl, whisk together the flour, baking soda, salt, and baking powder.
Add the dry ingredients to the wet in 3 portions and use a spoon to mix just until it comes together. Be careful not to over mix.
Pour batter into loaf pan and sprinkle turbinado sugar on top. Do this right before placing in the oven, or the sugar will sink and you won’t get the sugary crust on top.
Place in the oven and bake for about 40-55 minutes. Depends on how hot your oven is and how done you like it.
